2. Khuushuur (Fried Meat Pie)

Ingredients:

  • 500g ground beef or mutton
  • 1 large onion, finely chopped
  • Salt and pepper to taste
  • Vegetable oil, for frying
  • Round dumpling wrappers or homemade dough

Instructions:

  1. Mix the ground meat with chopped onion, salt, and pepper in a bowl.
  2. Take a portion of the meat mixture and place it in the center of a dumpling wrapper or rolled-out dough.
  3. Fold the wrapper over the filling to form a half-moon shape and press the edges to seal tightly.
  4. Heat vegetable oil in a frying pan over medium heat.
  5. Fry the khuushuur in batches until golden brown and crispy on both sides, about 3-4 minutes per side.
  6. Drain on paper towels to remove excess oil.

3. Tsuivan (Mongolian Noodle Stir-Fry)

Ingredients:

  • 300g beef or mutton, thinly sliced
  • 1 large onion, thinly sliced
  • 2 carrots, julienned
  • 2 potatoes, peeled and thinly sliced
  • 200g fresh noodles or dried egg noodles, cooked according to package instructions
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Soy sauce or hoisin sauce, for seasoning

Instructions:

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Add the sliced meat and stir-fry until browned.
  3. Add sliced onion, julienned carrots, and sliced potatoes to the pan. Stir-fry for a few minutes until vegetables start to soften.
  4. Season with salt, pepper, and a splash of soy sauce or hoisin sauce for flavor.
  5. Add the cooked noodles to the pan and toss everything together until well combined and heated through.
  6. Adjust seasoning to taste and serve hot.

4. Boortsog (Mongolian Fried Cookies)

Ingredients:

  • 500g all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 2 tablespoons melted butter or oil
  • 1 cup warm water (or milk)
  • Vegetable oil, for frying

Instructions:

  1. In a large bowl, mix together flour, baking powder, salt, and sugar.
  2. Add melted butter or oil and gradually add warm water (or milk), kneading until a smooth dough forms.
  3. Cover the dough with a damp cloth and let it rest for about 30 minutes.
  4. Roll out the dough on a floured surface to about 1/4 inch thickness.
  5. Cut the dough into strips, then into rectangles or diamond shapes.
  6. Heat vegetable oil in a deep frying pan or pot over medium heat.
  7. Fry the boortsog in batches until golden brown and crispy on both sides, about 2-3 minutes per side.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Serve warm or at room temperature.
